Mainstreaming Nutrition

Just as going green has become more mainstream I'm seeing more attention being paid to nutrition in standard American discourse. For the first time people in the lunch room in the Fort Mill office discuss what's best to eat. A girl in the peds office on our floor has gone vegetarian for her health and that of her children. My coworker, Patricia, has been able to discontinue all her diabetic meds by going vegan; she's also loosing weight. I am so encouraged by these changes. Think of all the other benefits resulting from these changes, from the environment to the animals that are not suffering in the process of becoming food. Step by step, little by little, like all difficult transitions, things are changing.
